Microwave Lemon Butter

Nothing quite beats the zesty deliciousness of lemon butter. This particular recipe is a microwave version, meaning no more stirring by a hot plate waiting for it to thicken.

Whether you lather it on freshly baked scones, spoon it into pre-made tart shells or enjoy it spread across your morning toast, lemon butter is a versatile favourite. Delicious!

Ingredients

2 lemons (rind and juice)

60g butter

1/3 cup sugar

2 egg yolks

Pinch of salt

 

Method

  1. Combine all of the ingredients in a medium-sized bowl.
  2. Cook covered on the defrost cycle in the microwave for approximately 6-8 minutes.
  3. Stir the mixture occasionally until thickened.
  4. Store in hot sterile jars.
