Six minute cake

While our busy lives may have you reaching for a store-bought option, this easy six minute cake recipe with its endless variations might have you changing your mind.

This easy, one bowl cake recipe uses ingredients you already have in your cupboard. It can be easily adapted to suit any occasion. It works well as cupcakes, a slab cake or can be decorated as your next birthday cake creation.

 

Ingredients

1 ½ cups self-raising flour

1 cup of sugar

2 eggs

115 grams soft butter

¼ cup milk

1 teaspoon vanilla

Pinch of salt

 

Method

  1. Preheat oven to 180 degrees Celsius.
  2. Put all ingredients in a bowl and beat using an electric mixer for six minutes.
  3. Pour cake into a cake tin and cook until browned on top or just cooked through.

 

Variations

Change up the flavour of your cake with these extra ingredients.

Coconut cake

Just add 1 tablespoon of coconut.

Coffee cake

Add 1 tablespoon of coffee essence or 1 shot of coffee to the mix.

Spice cake

Add 2 teaspoons of cinnamon, 1 teaspoon golden syrup and a pinch of bicarb soda.

Chocolate cake

Mix 3 teaspoon cocoa to a little hot water and add to the mix.
